in answer to OP's title question
following reason's
1 the game is free completely totally and utterly
2 has one of the (if not) best game design's ive seen in a while
3 is an actual challenge (go play league of angels and you know what i mean)

Same thing as with anything else that gets popular, sheeple mindedness. Facebook sells your data and other crazy shiz but people still use it because everyone else uses it. Same thing really.
I play POE because it find it a great way spending my time.

I shouldn't have to say this but gritty dark fantasy arpg games are actually quite rare, you can count the good ones on one hand.
Part of me is waiting for ggg to easy up on the rng, because under that proverbial mountain of rng mechanics is a truly wonderful game. It is just that mining down to that golden core is getting tiresome.
And in fact , people ARE leaving .

Your argument is wrong since when the point where there is no RNG anymore, the new "low" cannot be the new high since you can't go any lower.

Do you think the balance is good now or before the vaal orb was introduced? Because the RNG factor was massively increased by the implementation of that orb.

I think another important thing D2 did right was allow specific items to drop from specific bosses, even if the chance could be infinitesimally small. You could actually focus your farming for the specific set piece, unique, or rune that you wanted. PoE loot tables just become increasingly punishing in expanding non-specific loot tables with ever more likely garbage drops. Seems they kinda are going to the D2 design with Atziri stuff, but that's more like a Pandemonium Event type thing than targeted farming in my view.

Sorry for my late reply, just got back, but to awnser the OP:
Because there are NO other game to play.
For the old Diablo 2 fans, and all ARPG fans that enjoy depth and dark, PoE is the ONLY choice out there.
There are no other ARPG that come close, that captures the dark feel of Diablo 2 while offering the player the freedom and depth of a complex build system.
So we are stuck with either PoE or nothing.
Nothing being Diablo 3, Torchlight 2, or going back to Diablo 2. So yeah, left with nothing.
Unfortunately, many of PoE's systems are crippled by many overlapping layers of unnecessarily harsh RNG, which leaves these systems awfully unrewarding, and many times slows down the progression of the game because we are stuck with items we just cannot upgrade from.
