^This, since you have no weapon equipped you also have no base critical strike chance to scale upwards.

You can still deal critical hit's, but only with spells which provide there own crit%.

Only semi-crit you can deal with an unarmed attack build is infernal blow. Since the second portion of the attack(the body explosion) has it's own critical strike value inherent to it.

Do the skills ice crash or frenzy have a (hidden) critical value to them. I know they don't really have secondary attacks like iv but still...maybe?

No - Ice Crash and Frenzy are both attacks, and therefore scale from your weapon's critical strike chance. Any attacks whilst unarmed therefore cannot deal a crit. As stated above, spells have their own built in critical strike chance, and therefore are independant of your weapon.
