What happens if I pick those two passives? Mind over Matter converts damage to mana instead of life and Pyromantic Pact replaces my mana with Infernal Flame, on paper it should work the same but I don't want to underestimate the game lol.

If you have no mana, you have no mana for mind over matter to act on. Pyromantic pact replaces your mana, meaning you have no mana.
PoE tends to be reasonably consistent in that if you replace a resource or a resource cost with a different resource type, that doesn't also replace interactions based on that resource - generally speaking, interactions requiring that resource stop functioning. Your mana becomes infernal flame, but mind over matter does not become "infernal flame protects your life".

There were omitted exceptions from rule, like mixture of Eldritch Battery with MoM in PoE1.
